Chorizo Cake

Ok ... just a quick one before I pop off to bed. The next couple of days are going to be huge ... but then its sadly back to the grind on Monday. Tomorrow is J's birthday party during the day and then R's mega African send off. Sunday is Yeah Yeah Yeahs day!!
So our main contribution to the H's New Years Eve Cocktail party was a chorizo cake. A recipe that I culled from Tessa Kiros' Piri Piri and Starfish. This is ostensibly one of those beautifully photographed and designed coffee table cookbooks. But if you can score a cheap copy, please do. The recipes are fantastic and surprisingly easy to follow and prepare.
 
I'm not one for baking but this is one of those mix it all in a bowl and plomp in a tray type of recipes. And really anything chorizo is delicious so it was a no-brainer. Except for the fact that it was 37 degrees and not really conducive to having any kind of oven-ish activity.
Simply put its just flour, milk, eggs, baking powder, butter and pinch of salt for the batter. Mix all of this up with beaters (or by hand if you're a bit of a masochist).
 
Dice the Chorizo and some thickly cut Prosciutto and bung it in the mixture.
Its pretty much ready for the oven soon after that. It takes roughly about 40-50 mins. But watch it. The fat does bubble up on top and it looks like the cake is still wet, but in actual fact is brown under all of that and cooked.
 
Not quite sure if this was a resounding success. It was simply too hot for eating to begin with ... so a long cool drink was more on the cards. We also made an eggplant and capiscum jam as well as some eggplant and mozarella cheese croquettes.
 
Oh and I have been remiss on not showing you a pic of M's mini white choccy plum puds. So here is a snap.
 
Righto. Thats it for now. I'll just finish off listening to Jon Hopkin's Insides (which has made it into several Top 2009 lists including Boomkat's and Popmatters) and then its bed for me. Good Night Australia.
