Pigeons and Bay Leaves - our first cook up for the year

Ok ... we are about to commence our first cook up of the year. The menu is:

Entree:

Crispy Pig's Tail

Soup:

Celery Consomme

Main:

Roast Pigeon with Sausage & Peas
Roast Bone Marrow & Parsley Salad
Colcannon (ok .. mashed potatoes and herbs)

Dessert:

Butterscotch Pots de Creme
